Anthony Mejia brings over 25 years of restaurant technology leadership to his role guiding IT strategy for Zippy’s Restaurants. Founded in 1966, this iconic Hawaii institution features a unique three-in-one concept—fast-casual takeout, full-service dining, and a full-line bakery—spanning 22 Hawaii locations and a growing mainland presence in Las Vegas. Beyond his executive leadership at Zippy's, Anthony actively shapes industry innovation through a tech startup, a technology standards board, and three customer advisory boards.

Throughout his career, Anthony has scaled tech infrastructure for major multi-unit concepts. He served as VP of Technology at Lazy Dog Restaurants, building an eight-person team that supported the brand's growth from 7 to 33 locations, and as Senior IT Director at BJ’s Restaurants, where he managed systems integration and support for over 100 units. He also spearheaded technology strategy for Pieology Pizzeria’s 125+ global locations while concurrently operating an executive IT consulting practice.

Anthony holds a degree from the University of Colorado at Boulder and began his career with restaurant tech reseller Custom Business Solutions.
